Gnocchi with Porcini and Morels

Serves 4 ppl * Preparation time: 30 minutes * 

Ingredients

20g Dried Morels, rehydrated
50g Dried Porcini, rehydrated 
2 Onions, finely diced
1 Clove Garlic, chopped 
Fine Sea Salt
Fine Ground Black Pepper
750g Gnocchi (optional: gluten-free)
Wild Thyme 
Porcini Powder
Pamako Monovarietal

 

Steps

Rinse and rehydrate dried mushrooms around 15-20 minutes (just soak in water). 

Boil the water and cook Gnocchi (follow the instructions). 

Heat 3/4 spoons of Extra-Virgin Olive oil in a frying pan over medium heat.

When the oil shimmers, add the chopped onions and a bit of salt.

Add the hydrated mushrooms and sauté for about 5 minutes.

Add a bit of the porcini powder for more intense flavour, salt and pepper, garlic, gnocchi and cook for another 3-4 minutes.

Add thyme and mix it all together. Optional: a bit of white wine and goat cheese. 

Secret Ingredient: Garnish with Pamako Monovarietal.

Super easy to make, healthy and most certainly impressive.
