Ingredients

For the Roasted Figs:

  • 8-10 fresh figs, quartered

Step 1: Roast the Figs Preheat your oven to 200°C (400°F). Place the quartered fresh figs in a small baking dish. Drizzle them with the balsamic vinegar, Pamako olive oil, and a touch of thyme honey. Toss gently to coat. Roast for 15-20 minutes until the figs are soft, jammy, and the balsamic has reduced into a thick, bubbly syrup.


Step 2: Whip the Feta While the figs are roasting, add your feta, yogurt (or cream cheese), Pamako olive oil, and fresh thyme to a food processor. Pulse and blend until completely smooth, light, and airy. (Pro tip: If it’s too thick, add another splash of olive oil!).


Step 3: Toast the Sourdough Brush your thick slices of sourdough generously on both sides with Pamako olive oil. Grill them on a hot grill pan or toast them in the oven for a few minutes until they are golden brown and perfectly crispy on the outside, but still slightly soft in the center.

When you are ready to serve, let it sit at room temperature for about 10 to 15 minutes so it softens up for perfectly smooth spreading on your crostini.

Fresh figs are out of season where I am. What is a good substitute? If fresh figs are hard to come by, fresh seedless red grapes or sliced dark plums make fantastic alternatives!
