Ingredients:

  • 50g dried mixed wild mushrooms (soak in warm water for 15-20 minutes)
  • 1 onion, finely chopped
  • ½ bunch parsley chopped
  • ½ lemon (juice)
  • 50g butter or olive oil
  • 1L vegetable broth
  • 100ml cooking cream (optional)

Instructions:

Rinse the mushrooms and soak them in warm water for 15-20 minutes, then drain. Sauté the onion in butter or olive oil until soft. Add the mushrooms, season with salt and pepper, and cook for a few minutes. Pour in the broth and let simmer for 10 minutes. Stir in the cooking cream (if using), then add parsley and lemon juice.
